  • 1½ cups long grain white rice rinsed
  • 1 10.5 oz can cream of mushroom soup
  • 2 cups frozen corn kernels or 1 can corn, drained
  • 2–3 cups shredded Mexican blend cheese

Instructions

  1. Sauté the Aromatics: Set your Instant Pot to the Sauté setting. Once hot, add the olive oil and diced onion. Cook until the onion just starts to turn translucent.
